Masala chai

Mix dark tea with cardamom, cinnamon, cloves, ginger and dark peppercorns to make some Indian-motivated chai - perking up the senses is certain

Fixings
200ml-250ml milk (dairy or other)
1-2 tbsp sugar or syrup, similar to stevia, maple syrup, to taste
For the imbuement
3 green cardamom cases, slammed and husks eliminated
½ cinnamon stick
2 cloves
3 dark peppercorns
½ tsp ground ginger
2 tsp free leaf dark tea leaves, like Assam

Strategy
Stage 1
For the implantation, put the cardamom seeds in a pestle and mortar, alongside the cinnamon, cloves and peppercorns, and slam to deliver the oils - you would rather not make a powder. Tip into a dish and mix in the ginger and dark tea leaves.

Stage 2
Pour in 400ml water and bring to an extremely delicate stew over a low intensity, to permit the tea to implant before it begins to bubble. Mix in the milk and sugar or syrup to taste, and eliminate from the intensity. Leave to mix for 2 mins prior to stressing into mugs.
